Roasted Persimmons with whipped cream, the quickest dessert
I woke up craving something sweet. Maybe it’s because Christmas is upon us and I find all those pictures of the cakes & cookies on my Instagram feed. I plan to have a few dinner parties to end this year and dessert is definitely on my mind. But I like to make my own, but sometimes I am so exhausted from cooking all the mains , that dessert takes a back seat.
So, I saw persimmons in my fruit basket , there were still some left from when I made the ‘Persimmon & Whiskey holiday cocktails (find the recipe here). The tart , fresh, and crunchy texture looked inviting. So all I did was bake them for a few minutes in the oven after I bathed them some persimmon syrup that I had made earlier for the holiday cocktail (recipe in the cocktail post). Then I whipped up some cream (Amul whipped cream or fresh cream) with my hand blender with a bit of sugar and Voila! Dessert!. If you ever have friends and want to impress them with a little bit of dessert skills, go ahead try it , what I love about this dessert is that it’s not too sweet.
Recipe:
Slice Persimmons in to disks. Arrange them on a baking tray, pour some of the home-made persimmon syrup and add some star anise on top, pop-over the same in the oven for 20-25 minutes at 170 C until lightly browned at the edges. Whip some cream with white or brown sugar and pour over the persimmons and serve.
